Advance Order of particular product and delivering it on next day or later

I have got a scenario like this,
The restaurant takes advance order/ order booking of items. Against that order Customer gives advance payment. On delivery day Customer comes and pays the pending amount and takes away his/her ordered product(s)/item(s).

In SambaPOS, whenever i give entry to a product and closes the ticket, it gives impact to inventory items. But in this case inventory impact must not be active, the ticket has to be converted to delivery status after it's been delivered later.

At the end of the i need to track the booking orders which has not been delivered.

How can i handle this situation.
